Creamy Avocado & Black Bean Wrap
2 tablespoons apple cider vinegar
1 tablespoon olive oil
1 tablespoon finely chopped banana peppers
1/4 teaspoon salt
2 cups shredded red cabbage
1 carrot shredded
1/4 cup chopped arugula
1 15-ounce can black beans rinsed and drained
1 ripe avocado
1/2 cup colby jack cheese
2 tablespoons finely chopped red onion
10 inch whole wheat tortilla wraps
1. Whisk vinegar, oil, banana peppers and salt in medium bowl. Add shredded cabbage, carrot and arugula; toss to combine.
2. Mash beans and avocado in another medium bowl using a small food processor or potato masher or fork. Stir in cheese and onion.
3. To assemble the wraps, spread about 1/2 cup of the bean-avocado mixture onto wrap and top with about 2/3 cup of the cabbage mixture. Roll up and cut in half on a diagonal. Repeat with remaining ingredients.
