Grilled Veggie Sandwich - A Must Try!

Spring is supposed to start tomorrow but with all the snow that is flying about outside one would hardly know it.  But regardless of what the weather is like outside, in my kitchen things begin to change a little bit.  I stop craving all of the heavy comfort warming foods and start to transition to the lighter side making sure to take full advantage of all the fresh produce that the farmers market can serve up.  While the farmers market won't be serving anything up in my area for quite some time it still doesn't mean that I can't throw together something amazing from ingredients that I find at the regular store.  The recipe listed below is one of my all time favorites and is so very simple to make and can take on so many different variations.  Have fun with it.....it is delicious!

Grilled Veggie Sandwich

For this recipe I love to use either an Itailian bakers loaf, focaccia loaf or sour dough bread.

1/3 cup mayonnaise
2-3 cloves of garlic finely minced
1 tablespoon of lemon juice
3 tablespoons olive oil
1 cup sliced red, yellow and orange bell pepper
1 small zucchini, sliced
1 small yellow squash, sliced
1 red onion, sliced
1 pound fresh mushrooms, washed and thinly sliced
1/2 cup feta cheese

Step 1:
In a bowl mix together the mayonnaise, garlic and lemon juice.  Mix well and set aside.

Step 2:
Preheat grill

Stpe 3:
Brush veggies with olive oil and place on the grill to cook.  Cook for about 3 minutes until vegetables are tender crisp.

Stpe 4:  
Slice up the bread of your choice and spread the mayonnaise mixture on both slices.  Sprinkle with feta cheese and place on the grill chees side up.  Grill for 2-3 minutes with the cover down.  Watch them carefully so that the bottoms do not burn.  Remove from grill.  Layer on the vegetables and enjoy either as an open faced sandwich or the normal way.  The choice is yours.  Slice in half and enjoy!
