Grilled Veggie Sandwich
For this recipe I love to use either an Itailian bakers loaf, focaccia loaf or sour dough bread.
1/3 cup mayonnaise
2-3 cloves of garlic finely minced
1 tablespoon of lemon juice
3 tablespoons olive oil
1 cup sliced red, yellow and orange bell pepper
1 small zucchini, sliced
1 small yellow squash, sliced
1 red onion, sliced
1 pound fresh mushrooms, washed and thinly sliced
1/2 cup feta cheese
In a bowl mix together the mayonnaise, garlic and lemon juice. Mix well and set aside.
Brush veggies with olive oil and place on the grill to cook. Cook for about 3 minutes until vegetables are tender crisp.
Slice up the bread of your choice and spread the mayonnaise mixture on both slices. Sprinkle with feta cheese and place on the grill chees side up. Grill for 2-3 minutes with the cover down. Watch them carefully so that the bottoms do not burn. Remove from grill. Layer on the vegetables and enjoy either as an open faced sandwich or the normal way. The choice is yours. Slice in half and enjoy!
