Springtime Spinach Salad with Poppy Seed Dressing
1/4 cup Apple Cider Vinegar
1/2 cup Extra-Virgin Olive Oil
1/4 cup Sugar
1 Tablespoon Poppy Seeds
2 teaspoons Finely Minced Onion
1 teaspoon Worcestershire Sauce
1 teaspoon Paprika
1 (16 ounce) Bag of Baby Spinach
1 cup Sliced Fresh Strawberries
1/4 cup Sliced Red Onion
1 (4 ounce) Package of Crumbled Blue Cheese
1/2 cup Roasted Almonds or Pecans or 1/4 cup of both
1. Whisk vinegar, oil, sugar, poppy seeds, minced onion, worcestershire sauce and paprika in a bowl until the sugar has completely dissolved. Set aside.
2. Layer in individual serving bowls a bed of spinach, sliced strawberries, sliced red onion, blue cheese and almonds or pecans. Drizzle dressing over salad and serve immediately. Enjoy!
This salad can be made ahead of time, just do not pour the dressing over the salad until ready to serve. This recipe makes about 6 servings.
